Gluten Free Chocolate Crinkle Cookies

T-30 minutes to have these fudgy morsels in your hands. 

I love a yummy sweet treat in the afternoon hot from the oven, especially as we start moving into the cooler winter months. 

While the original recipe was full of refined sugars, eggs and butter (feel free to sub those in!) I wanted a little healthier version, so whipped this up and success! A few flax eggs here, coconut oil substitutions there and ALWAYS adding guar or xantham gum to make sure everything sticks together when using gluten free flour.

Pull out your vegan butter and pre-heat your oven babe. 

Because these bitches are HAPPENING for you right meow.

Chocolate Crinkle Cookies

Servings: 36 cookies

Ingredients:

  • 3 tbsp ground flax meal
  • 9 tbsp water
  • 1/4 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 2 tsp vanilla
  • 1/2 cup baking cocoa
  • 2 1/2 cups gfree flour blend*
  • 2 tsp baking powder
  • 1 tsp xanthan gum
  • 1/2 tsp salt
  • Icing sugar for rolling, approx. 1 cup

Method:

  1. Preheat oven to 350℉
  2. Place flax in a large bowl, add water and mix with a whisk. Let stand for 5 minutes
  3. Add melted coconut oil, maple syrup, and vanilla and mix well.
  4. Sift in dry ingredients, mix until the dough comes together.
  5. Roll into 1 inch balls. Roll each ball in icing sugar in small bowl until coated.
  6. Arrange 2 inches apart on greased or wax-lined baking sheets.
  7. Bake for ten minutes. Cookies will be soft.
  8. Let stand on sheets for 5 minutes then transfer to a wire rack to cool
